Sometimes the best things come in small packages, and that’s exactly what this coconut yogurt is all about! This recipe is so creamy, rich and filling that you only need a couple bites to get going in the morning. I also love recipes that can be put together quickly without compromising flavor, especially when I’m in a rush. You can make this pudding the night before or if you’re rushing out the door and eat it at work. Not afan of coconut? You can also use any plain, low fat or full fat yogurt of your choice!
¼ cup plain coconut yogurt (I like Anita’s)
1 tablespoon goji berries
1 tablespoon chia seeds
2 tablespoons raw oats
Dash of cinnamon
- Add ingredients together in a jar
- Let sit for 1 hour or overnight to prep for the next day (it will get very thick)
- Add a splash of water or almond milk, mix, and enjoy!
