kale

We’ve heard it a million times, “eat your greens” from doctors, friends & nutritionists alike and still many of us aren’t doing it.  Yes I preach it and most of my clients do it but kids (and sometimes men) are a whole other ball game.  Sure green isn’t the most attractive color (albeit my all time favorite and not because it is affiliated with healthy foods) and green foods usually don’t taste like candy but they do provide us with an insane amount of nutrition and are really worth getting down.  Brimming with vitamins C & A, folate, calcium and potassium not to mention fiber and minimal calories (about 25 calories per cup), they won’t just fight off disease, they help keep you full and trim too!

Even though you might love salads for lunch and veggies at dinner, your family and friends might not feel the same.  So how do you convince them to down their greens?  Simple.  Add them to a smoothie and drink them.  I have a few recipes I use to do this and in both, you can not taste the greens, I promise.  Below are my simple and easy recipes enjoyable for breakfast, snacks and even meals on the go.

A quick note on blenders.  The Vitamix blender really is the best on the market.  It costs a pretty penny but it blends fruits and veggies so smoothly that even the pickiest of eaters won’t detect the veggies in there.  It also makes many other things as well (soup, purees, salsas, salads, ice cream) and I have found it to be an incredible investment.  My other favorite blender is the Oster Single Serve Blender.  You simply blend and go, the same container you blend in, becomes the one you drink out of.  No mess to clean up later, it’s simply genius.

Green Protein Shake (serves 1)
1 serving protein powder (I like Tera’s Whey or Sun Warrior Vegan Raw Protein Powder), chocolate or vanilla
1 cup unsweetened almond milk (again chocolate or vanilla)
1 cup baby spinach or baby kale
Ice cubes (as many as desired)
Cinnamon, dash (if desired)

Place all ingredients in a blender and blend on high for 1 minute or until thoroughly mixed.  Pour, drink, glow.

All Fruit and Veggie Green Smoothie (serves 3)

1 Pear, diced (skin on)
1/2 cup water
juice from 1/2 lemon
1 cup greens (baby kale or baby spinach)

Blend all ingredients in blender.  Pour, drink, glow.
